Pumpkin Whoopie Pies

These handheld delights are a great mess-free dessert for kids and kids at heart. With only 5 ingredients total, you may have just found your new family tradition.

Ingredients:

Soft Pumpkin Cookies

  • 1 box spice cake mix (OR yellow cake mix plus 1 Tbsp. pumpkin pie spice)
  • 15 oz pumpkin puree
  • 1/2 cup oil

Filling

  • 1 pkg. Jello instant cheesecake pudding mix
  • 16 oz whipping cream

Pumpkin Chocolate Chip Cheesecake Bites

Like cake balls, but better. A crunchy chocolate shell wrapped around a smooth pumpkin spice center, these sinful cheesecake bites might not make it through the first course of Thanksgiving diner. Probably best to save some back for yourself.

Ingredients:

  • 1 pkg (8 oz) cream cheese
  • ? cup pumpkin puree
  • 1 cup graham cracker crumbs
  • ½ cup powdered sugar
  • 2 tsp pure maple syrup
  • 1 tsp pumpkin pie spice
  • 1½ cups mini chocolate chips, divided
  • 1 pkg vanilla almond bark (about 1 lb)
  • 2 tsp vegetable shortening

No-Bake Cheesecake Mousse

These mini mousse cups may look advanced, but this no-bake recipe couldn’t be easier to make. Top them off with some whip cream and a cinnamon stick or two and your friends and family will more than impressed.

Ingredients:

Crust

  • 1 sleeve graham crackers (about 9 crackers)
  • 4 tbsp butter, melted
  • 2 tbsp sugar
  • 2 tbsp brown sugar

Filling

  • 1 (8 oz) pkg cream cheese, softened to room temperature
  • 1 (15 oz) can pumpkin puree
  • 3 tsp pumpkin pie spice
  • 1 (1 oz) package sugar free cheesecake flavored instant pudding mix (or ? of a non-sugar free instant pudding may be used)
  • 1 (14 oz) can sweetened condensed milk
  • 1 (12 oz) container frozen whipped topping, plus extra for garnish if desired
